To create a sufficient dough-rising environment, users can manage humidity levels with the infinite humidity controls, and its water reservoir generates moisture.
As a single-section base, the Duke PFB-2 proofing cabinet can be installed into a Duke 613-E3 oven since combining these units can streamline the proofing and baking process. For a cohesive look, its front, sides, back, and top are made of rust- and corrosion-resistant stainless steel. Its tempered glass door grants a full view into the cabinet to manage proofing, and it self-closes to minimize heat loss. Overall, this cabinet measures 38 inches wide by 38 inches deep by 401/2 inches high and is furnished with casters for mobility.
