The Blodgett ZEPH-100-E DBL full-size convection oven holds five 18-inch-by-26-inch pans in each compartment, which have racks that are adjustable to 11 positions with 15/8-inch minimum spacing. The baking compartments have a standard depth that accommodates pans in the left-to-right position. Lamps shine inside the cavities to provide product visibility, so staff members can monitor the cooking process through the double-pane windows. The doors are easy to open since one handle opens two doors at the same time.
