An item from the Platinum series, the Southbend PCE15B/TD-V convection oven has a double-deck design built to meet high restaurant demand. Its full-size configuration and 29-inch bakery depth can hold large batches of pastries, side dishes, and other guest favorites. Each oven chamber has five oven racks that can be adjusted along the 11 position rack guides to accommodate a variety of pan configurations. Externally, this unit is made of dent- and corrosion-resistant stainless steel, while the interior is constructed of enameled porcelain to ensure longevity and to aid in heat retention. Each deck is equipped with two dependent doors that are windowed to provide a view of the cooking process.
Able to be set between 150 and 500 degrees Fahrenheit, the Southbend PCE15B/TD-V convection oven can perform a variety of cooking functions, which are programmed through the digital touchscreen controls located on the front right side of each oven. Each oven has its own controls, accommodating a variety of food items to be prepared simultaneously. A forced cool down function permits users to quickly decrease the ovena€™s interior temperature. For flexibility in installation locations, this ventless unit doesn't have to be placed under a hood.
