To prevent oil degeneration, the Frymaster RE180-21 high-production electric fryer's heat response system responds accurately to product loads and provides a precise oil temperature reading. A digital controller provides a temperature readout in Fahrenheit or Celsius, while the 1-degree-Fahrenheit compensating temperature probe is mounted on the swing-up, self-standing heating elements for exact temperature readings. At the bottom of the unit, a sloped, deep cold zone catches sediment that could otherwise impact oil quality. As this particulate builds up, the 1 1/4-inch ball-type drain valve releases it to lengthen the oil's lifespan.
This floor-model Frymaster RE180-21 electric fryer measures 20 inches wide by 39 5/8 inches deep by 44 3/4 inches high and is mounted on 6-inch legs that can be adjusted on irregular flooring. Its frypot, doors, and sides are made of stainless steela€”a durable metal that resists corrosion and withstands heavy-duty use. The frypot's 80-pound oil capacity can produce as many as 84 pounds of french fries in an hour, which is ideal for frying commercial quantities of food. Its open pot design can be cleaned easily and has an 18-inch-wide by 18-inch-deep by 4 3/8-inch-high cooking area.
